Instructions to make King Trumpet & Shimeji Mushrooms Simmered in Sweet Soy Sauce:
  1. Cut the king trumpet mushrooms into 5 mm thick pieces. Tear the shimeji mushrooms into small bunches.
  2. Place the mushrooms in the pressure cooker. Add the flavoring ingredients and mix.
  3. Cover Step 2 with a lid and turn on the heat. Once the pressure has lifted, lower the heat to low and pressurize.
  4. [The pressure cooking time is approximate] For a standard pressure cooker…about 3 minutes. For a high pressure cooker…about 1 minute.
  5. Once pressurized, stop the heat. When the pressure has been released, open the lid.
  6. Turn on the heat again without the lid and simmer for 3 minutes.
  7. Let cool and transfer to an airtight container. Store in the refrigerator.
