  11. Prepare 2 tbsp Sesame oil
  12. Get 1 Vinegar (for burdock)

Steps to make Kenchin Soup:
  1. Soak the burdock in vinegar water for about 5 minutes and drain. In a pot, heat some oil and add the burdock and carrots and cook for a few minutes. Then add the taro and konnyaku.
  2. I also added Maitake mushrooms♪ Cook for a short while.
  3. Add the tofu and lightly smash with a spatula. Cook another few minutes.
  4. Add the dashi and bring to a boil. Skim off the scums and cook until the vegetables are soft.
  5. Adjust the seasoning with A . Add the sesame oil.
  6. Add the sliced scallions and bring to a boil and done. Try it with shichimi spice.

Grains can be wonderful for fighting a terrible mood. Teff, barley, millet, quinoa, etc are all excellent for helping you be in a happier state of mind. They help you feel full too which can actually help to make your mood better. Feeling starved can really bring you down! These grains can help your mood elevate because it’s easy for your body to digest them. These foods are easier to digest than others which helps kick start a rise in your blood sugar which in turn kicks up your mood to a happier place.

Your mood could really be helped by green tea. You were just anticipating to read that, weren’t you? Green tea is loaded with a certain amino acid known as L-theanine. Studies have shown that this amino acid basically stimulates brain waves. This helps focus your mental energy while simultaneously calming your body.
