Instructions to make Shortcut Pepper Steak:
    • Note that it takes about 15-20 minutes to cook this dish, once all of the veggies and beef has been prepped. So try to time your rice so that it's ready to eat at the same time.
  1. Prepare rice according to directions.
  2. In skillet/wok, over medium-high heat, stir fry peppers, onion, and garlic in 1 Tbsp of hot vegetable oil until tender/crisp. Remove and set aside.
  3. In same skillet, stir fry HALF of beef strips in remaining 1 Tbsp hot vegatable oil until browned. Remove and set aside. Repeat with remaining beef.
  4. In same skillet, combine soup, soy sauce, and ginger. Mix well. You can opt to adjust the soy sauce and ginger to suit your taste. Or you can substitute a Tbsp of oyster sauce and 1 teaspoon fresh, grated ginger.
  5. Return veggies and beef to skillet and heat through, stirring occasionally.
  6. Serve over bed of hot, cooked rice.
    • I've also made this using frozen peppers and/or onions. Although you can't beat fresh veggies, it really doesn't affect the flavor much.
  7. *** Recipe originates from Campbell's "Fabulous One-Dish Recipes" cookbook (1992) ***

Foods That Can Make Your Mood Better

A lot of us believe that comfort foods are terrible for us and that we must avoid them. But if your comfort food is candy or junk food this holds true. Otherwise, comfort foods could be extremely nutritious and good for you. There are a number of foods that, when you consume them, may better your mood. When you are feeling a little down and need an emotional pick-me-up, test out some of these.

Eggs, you may be astonished to find out, are wonderful at fighting depression. You must make sure, however, that what you make includes the yolk. Whenever you want to cheer yourself up, the egg yolk is the most essential part of the egg. Eggs, specifically the egg yolks, are full of B vitamins. B vitamins can be terrific for lifting up your mood. This is because they help improve the function of your neural transmitters, the components of your brain that dictate your mood. Consume an egg and feel a lot happier!

Put together several trail mix of nuts or seeds. Your mood can be elevated by consuming peanuts, almonds, cashews, sunflower seeds, pumpkin seeds, and other types of nuts. This is because these nuts are rich in magnesium, which helps to raise your production of serotonin. Serotonin is referred to as the “feel good” chemical and it tells your brain how you should be feeling all the time. The more serotonin in your brain, the happier you’ll feel. Not just that but nuts, specifically, are a great source of protein.

Cold water fish are excellent for eating if you are wanting to combat depression. Cold water fish including tuna, trout and wild salmon are rich in DHA and omega-3s. These are two substances that promote the quality and function of the gray matter in your brain. It’s the truth: eating tuna fish sandwiches can actually help you battle your depression.

Some grains are really wonderful for repelling bad moods. Quinoa, millet, teff and barley are all really great for helping boost your happiness levels. These foods fill you up better and that can help improve your moods as well. It’s easy to feel a little bit off when you are starving! These grains can help your mood elevate because it’s not at all hard for your body to digest them. These foods are easier to digest than others which helps jumpstart a rise in your blood sugar which in turn takes your mood to a happier place.

Green tea is really excellent for your mood. You just knew it had to be mentioned in this article, right? Green tea is loaded with an amino acid known as L-theanine. Studies have discovered that this amino acid basically induces brain waves. This will better your brain’s concentration while at the same calming the rest of your body. You knew green tea could help you feel so much healthier. Now you know that applies to your mood too!

As you can see, you don’t need to eat junk food or foods that are not good for you just so to feel better! Go with these suggestions instead!
